Blueberry Pancakes

in one bowl:

  • 2 cups (whole wheat) flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp light brown sugar
  • generous sprinkling of ground Flax Seed, if you have it

in another bowl:

  • 2 eggs, thoroughly beated
  • 1 1/2 cup buttermilk (can be made from powdered buttermilk if you have that lying around, say, for bread-machine-baking purposes
  • 1 tbsp butter, melted and cooled

in a measuring cup

  • 1 cup frozen blueberries, still frozen

Pour the wet bowl into the dry bowl. mix like once or twice. add the blueberries and mix for approximately 10 seconds. If it’s too thick add some more (buttermilk). Cook on high heat on the griddle ’til they’re nice and pancake-y. mmmmmmm!

    If you wait until you pour the batter on the griddle, and THEN add the blueberries on top of the batter, then you (1) won’t end up with totally blue pancakes and (2) can spell swear words with the blueberries with greater accuracy.

    But maybe neither of these is your goal?

    Ah, good point… Although using frozen blueberries helps with the blue pancake issue. Also, my kid isn’t old enough to find raunchy pancakes funny yet.. or maybe this is my golden opportunity to make swearing pancakes before she learns how to read?
